Ingredients:
- 1 qt raw pepitas (pumpkin seeds)
- Cinnamon
- Sugar
- Kosher Salt
- Xanthan Gum (optional)
Method:
- Roast pepitas until fragrant
- Pour boiling water over pepitas, enough to cover, and let soak overnight
- Discard soaking water
- In a high powered blender, blend pepitas with 4 quarts of water on high
- While blending, add sugar, cinnamon, and salt to taste
- If desired, add a tiny amount of xanthan gum while blending to thicken
- If you like a smoother drink, strain through a chinois
- Shake before serving. Serve cold.
