• 1 qt raw pepitas (pumpkin seeds)
  • Cinnamon
  • Sugar
  • Kosher Salt
  • Xanthan Gum (optional)


  1. Roast pepitas until fragrant
  2. Pour boiling water over pepitas, enough to cover, and let soak overnight
  3. Discard soaking water
  4. In a high powered blender, blend pepitas with 4 quarts of water on high
  5. While blending, add sugar, cinnamon, and salt to taste
  6. If desired, add a tiny amount of xanthan gum while blending to thicken
  7. If you like a smoother drink, strain through a chinois
  8. Shake before serving. Serve cold.
